Foaming Agents

Foaming agents are used to increase the stability of a foam for example on a soft drink.

Quillaia extract (E999)

Quillaia extract (E999) is an aqueous extract of the bark of the tree Quillaia saponaria Molina. The active ingredients are saponins which are also present in sarsaparilla, liquorice and yucca. Quillaia extract is used to provide a stable foaming head on soft drinks. In the EU quillaia extract is permitted only for use in soft drinks such as ginger beer and cream soda and cider (but not cidré bouché) to a maximum level of 200mg/litre.
